Lemon Posset and Stag Shortbread


A simply classic British dessert that goes delightfully well with our buttery Stornoway shortbread.

Our traditional shortbread was a Gold Star winner at the Great Taste Awards in 2007. Made to a time-honoured recipe, its full-bodied flavour and buttery silkiness that makes for a delightful, crisp and light shortbread.

This recipe will make 4 of the creamiest, tastiest, easiest desserts that will look very impressive.


  • 3 Lemons – zest & juice
  • 430ml Double cream
  • 130g Caster sugar
  • Stag Bakeries Shortbread


  • Add all ingredients to a pan and bring to the boil
  • Once it reaches boiling point turn down the heat and let it simmer for a few minutes.
  • Strain the mixture through a sieve to make smooth.
  • Equally divide into a tumbler or glass
  • Leave in the fridge to set for minimum 5 hours.
  • Once set, possets can last up to 4 days in the fridge.
